A Belgian saison and farmhouse ale strain from Wallonia. Produces a classic saison with earthy, peppery, and spicy notes, with some buble gum esters. Tart and dry on the palate with a crisp and mildly acidic finish. It is suggested to let this strain free rise towards the end of fermentation achieve full attenuation. This strain is notorious for a rapid and vigorous start to fermentation, but then doesn’t reach terminal gravity. Fermentation will eventually finish given time and warm temperatures. For higher gravity beers, it’s best to blend this yeast with another strain like S-26 for a complete attenuation.
